Ingredients

  • 1 lb beef sirloin, cut into cubes
  • 1 cup couscous
  • 1 1/2 cups beef broth
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, halved
  • 1/4 cup feta cheese, crumbled
  • Salt and pepper to taste


Instructions

  1. Cook couscous: Combine couscous and beef broth in a saucepan. Bring to a boil, then reduce heat and simmer for 5 minutes. Fluff with a fork.
