Ingredients
- 1 lb beef sirloin, cut into cubes
- 1 cup couscous
- 1 1/2 cups beef broth
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup Kalamata olives, halved
- 1/4 cup feta cheese, crumbled
- Salt and pepper to taste
Instructions
- Cook couscous: Combine couscous and beef broth in a saucepan. Bring to a boil, then reduce heat and simmer for 5 minutes. Fluff with a fork.
- Prepare beef: In a bowl, mix olive oil, lemon juice, garlic, rosemary, and thyme. Add beef cubes and marinate for 15 minutes.
- Cook beef: Heat a skillet over medium-high heat. Add beef and cook until browned on all sides.
