Description

A simple and flavorful one-pan meal featuring tender chicken, bright lemon, aromatic garlic, healthy spinach, and creamy Parmesan cheese tossed with orzo pasta.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and black pepper to taste
  • 4 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 lemon, juiced
  • 5 ounces fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish, optional)


Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  2. Season chicken pieces with salt and pepper. Add chicken to the skillet and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
  3. Add minced garlic to the skillet and cook for about 30 seconds until fragrant, being careful not to burn it.
  4. Stir in the orzo pasta and toast for 1-2 minutes.
  5. Pour in the chicken broth and lemon juice. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  6. Reduce heat to low, cover, and cook for 10-12 minutes, or until the orzo is al dente and most of the liquid has been absorbed.
  7. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  8. Return the cooked chicken to the skillet. Stir in the grated Parmesan cheese until melted and creamy.
  9. Taste and adjust seasoning with salt and pepper if needed.
  10. Serve immediately, garnished with fresh parsley if desired.

Notes

  • For a richer flavor, use half chicken broth and half heavy cream.
  • Add other vegetables like cherry tomatoes or peas along with the spinach.
  • Ensure the chicken is cooked through before serving.
