Description
A simple and flavorful one-pan meal featuring tender chicken, bright lemon, aromatic garlic, healthy spinach, and creamy Parmesan cheese tossed with orzo pasta.
Ingredients
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and black pepper to taste
- 4 cloves garlic, minced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 lemon, juiced
- 5 ounces fresh spinach
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Season chicken pieces with salt and pepper. Add chicken to the skillet and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
- Add minced garlic to the skillet and cook for about 30 seconds until fragrant, being careful not to burn it.
- Stir in the orzo pasta and toast for 1-2 minutes.
- Pour in the chicken broth and lemon juice. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Reduce heat to low, cover, and cook for 10-12 minutes, or until the orzo is al dente and most of the liquid has been absorbed.
- Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
- Return the cooked chicken to the skillet. Stir in the grated Parmesan cheese until melted and creamy.
- Taste and adjust seasoning with salt and pepper if needed.
- Serve immediately, garnished with fresh parsley if desired.
Notes
- For a richer flavor, use half chicken broth and half heavy cream.
- Add other vegetables like cherry tomatoes or peas along with the spinach.
- Ensure the chicken is cooked through before serving.
