Description

Enjoy a light and cozy lemon chicken soup. This healthy soup is perfect for a comforting meal.


Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 lb boneless, skinless chicken breasts, cooked and shredded
  • 1/2 cup orzo pasta
  • 1/4 cup lemon juice
  • 2 tbsp fresh dill, chopped
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more.
  4. Pour in chicken broth and bring to a boil.
  5. Add shredded chicken and orzo pasta.
  6. Reduce heat and simmer until orzo is cooked, about 10 minutes.
  7. Stir in lemon juice and dill.
  8. Season with salt and pepper to taste.
  9. Serve hot.

Notes

  • Adjust lemon juice to your preference.
  • Add more broth for a thinner soup.
  • Use pre-cooked rotisserie chicken for convenience.
