Description

Quick and easy lean ground beef veggie stir fry for a healthy and satisfying meal.


Ingredients

  • 1 lb Lean Ground Beef
  • 1 tbsp Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Red Bell Pepper, sliced
  • 1 Green Bell Pepper, sliced
  • 1 cup Broccoli Florets
  • 1 cup Carrots, sliced
  • 1/4 cup Soy Sauce
  • 1 tbsp Honey
  • 1 tsp Ginger, grated
  • 1/2 tsp Red Pepper Flakes (optional)
  • Cooked Rice or Quinoa, for serving


Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add ground beef and cook, breaking it apart, until browned. Drain any excess fat.
  3. Add onion and garlic to the skillet and cook until softened, about 3 minutes.
  4. Add bell peppers, broccoli, and carrots to the skillet. Cook until vegetables are tender-crisp, about 5-7 minutes.
  5. In a small bowl, whisk together soy sauce, honey, ginger, and red pepper flakes (if using).
  6. Pour sauce over the beef and vegetables. Stir to combine and cook for 2-3 minutes, or until sauce has thickened slightly.
  7. Serve immediately over cooked rice or quinoa.
