Quick and easy lean ground beef veggie stir fry for a healthy and satisfying meal.
Ingredients
- 1 lb Lean Ground Beef
- 1 tbsp Olive Oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 Red Bell Pepper, sliced
- 1 Green Bell Pepper, sliced
- 1 cup Broccoli Florets
- 1 cup Carrots, sliced
- 1/4 cup Soy Sauce
- 1 tbsp Honey
- 1 tsp Ginger, grated
- 1/2 tsp Red Pepper Flakes (optional)
- Cooked Rice or Quinoa, for serving
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add ground beef and cook, breaking it apart, until browned. Drain any excess fat.
- Add onion and garlic to the skillet and cook until softened, about 3 minutes.
- Add bell peppers, broccoli, and carrots to the skillet. Cook until vegetables are tender-crisp, about 5-7 minutes.
- In a small bowl, whisk together soy sauce, honey, ginger, and red pepper flakes (if using).
- Pour sauce over the beef and vegetables. Stir to combine and cook for 2-3 minutes, or until sauce has thickened slightly.
- Serve immediately over cooked rice or quinoa.
Notes
- Adjust the amount of red pepper flakes to your preference for spice.
- Feel free to substitute other vegetables, such as zucchini, mushrooms, or snap peas.
- For a lower sodium option, use low-sodium soy sauce.
