A vibrant and flavorful Italian tortellini pasta salad perfect for parties, lunches, or a simple meal.
Ingredients
- 1 (20 ounce) package cheese tortellini
- 1/2 cup sun-dried tomatoes, oil-packed, drained
- 1/2 cup black olives, sliced
- 1/2 cup marinated artichoke hearts, quartered
- 1/4 cup fresh basil, chopped
- 1/4 cup Parmesan cheese, grated
- 1/4 cup Italian salad dressing
Instructions
- Cook tortellini according to package directions. Drain and rinse with cold water.
- In a large bowl, combine tortellini, sun-dried tomatoes, black olives, artichoke hearts, basil, and Parmesan cheese.
- Pour Italian salad dressing over the mixture and toss gently to coat.
- Refrigerate for at least 30 minutes to allow flavors to meld.
- Serve chilled.
