Ingredients
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup uncooked white rice
- 2 cups chicken broth
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1/4 cup chopped fresh parsley, for garnish
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Add chicken pieces and season with salt and pepper. Cook until browned on all sides, about 5-7 minutes.
- Stir in the uncooked rice and cook for 1 minute, stirring constantly.
- Pour in the chicken broth, honey, soy sauce, minced garlic, and grated ginger. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let stand, covered, for 5 minutes.
- Fluff the rice with a fork. Garnish with fresh parsley before serving.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the sauce.
- You can substitute chicken breasts for thighs, but adjust cooking time as needed.
