Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1/4 cup chopped fresh parsley, for garnish
  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  2. Add chicken pieces and season with salt and pepper. Cook until browned on all sides, about 5-7 minutes.
  3. Stir in the uncooked rice and cook for 1 minute, stirring constantly.
  4. Pour in the chicken broth, honey, soy sauce, minced garlic, and grated ginger. Stir to combine.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Remove from heat and let stand, covered, for 5 minutes.
  7. Fluff the rice with a fork. Garnish with fresh parsley before serving.

  • For a spicier kick, add a pinch of red pepper flakes to the sauce.
  • You can substitute chicken breasts for thighs, but adjust cooking time as needed.
