Description
This Hobo Casserole is a simple and hearty dish. It combines ground beef, vegetables, and potatoes for a comforting meal.
Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 cups chopped potatoes
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 can (10.75 ounces) condensed cream of mushroom soup
- 1/2 cup milk
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- Brown ground beef in a skillet. Drain excess fat.
- Add onion, potatoes, and mixed vegetables to the skillet. Cook for 5-7 minutes.
- In a bowl, mix cream of mushroom soup and milk.
- Pour soup mixture over the beef and vegetable mixture. Stir to combine.
- Transfer to a greased 9×13 inch baking dish.
- Bake for 30-40 minutes, or until potatoes are tender and casserole is bubbly.
- Let stand for a few minutes before serving.
Notes
- You can use any combination of vegetables you like.
- For a richer flavor, add shredded cheese during the last 10 minutes of baking.
- If you don’t have cream of mushroom soup, cream of celery or chicken soup will work.
