Description

This Hobo Casserole is a simple and hearty dish. It combines ground beef, vegetables, and potatoes for a comforting meal.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cups chopped potatoes
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 can (10.75 ounces) condensed cream of mushroom soup
  • 1/2 cup milk
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Brown ground beef in a skillet. Drain excess fat.
  3. Add onion, potatoes, and mixed vegetables to the skillet. Cook for 5-7 minutes.
  4. In a bowl, mix cream of mushroom soup and milk.
  5. Pour soup mixture over the beef and vegetable mixture. Stir to combine.
  6. Transfer to a greased 9×13 inch baking dish.
  7. Bake for 30-40 minutes, or until potatoes are tender and casserole is bubbly.
  8. Let stand for a few minutes before serving.

Notes

  • You can use any combination of vegetables you like.
  • For a richer flavor, add shredded cheese during the last 10 minutes of baking.
  • If you don’t have cream of mushroom soup, cream of celery or chicken soup will work.
