Description

This High Protein Taco Casserole is a hearty and flavorful meal. It’s perfect for a quick and easy weeknight dinner.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 cup salsa
  • 6 high-protein tortillas, cut into pieces
  • 2 cups shredded cheddar cheese
  • Optional toppings: sour cream, avocado, cilantro


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown ground beef in a skillet over medium heat. Drain any excess grease.
  3. Stir in taco seasoning, black beans, corn, and salsa.
  4. In a baking dish, layer tortilla pieces, meat mixture, and cheese. Repeat layers.
  5. Top with remaining cheese.
  6. Bake for 20-25 minutes, or until cheese is melted and bubbly.
  7. Let cool slightly before serving. Add desired toppings.
