This High Protein Taco Casserole is a hearty and flavorful meal. It’s perfect for a quick and easy weeknight dinner.
Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 cup salsa
- 6 high-protein tortillas, cut into pieces
- 2 cups shredded cheddar cheese
- Optional toppings: sour cream, avocado, cilantro
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground beef in a skillet over medium heat. Drain any excess grease.
- Stir in taco seasoning, black beans, corn, and salsa.
- In a baking dish, layer tortilla pieces, meat mixture, and cheese. Repeat layers.
- Top with remaining cheese.
- Bake for 20-25 minutes, or until cheese is melted and bubbly.
- Let cool slightly before serving. Add desired toppings.
Notes
- You can substitute ground turkey or chicken for ground beef.
- Adjust the amount of taco seasoning to your preference.
- For a spicier casserole, use a hotter salsa.
