Ingredients
- 4 oz Cooked Chicken Breast, diced
- 1/2 cup Black Beans, rinsed and drained
- 1/2 cup Corn, canned or frozen
- 1/4 cup Red Onion, diced
- 1/4 cup Bell Pepper, diced
- 2 tbsp Cilantro, chopped
- 2 tbsp Lime Juice
- 1 tbsp Olive Oil
- 1/4 tsp Chili Powder
- 1/4 tsp Cumin
- Salt and Pepper to taste
- 2 cups Mixed Greens
Instructions
- In a bowl, combine the diced chicken, black beans, corn, red onion, bell pepper, and cilantro.
- In a small bowl, whisk together the lime juice, olive oil, chili powder, cumin, salt, and pepper.
- Pour the dressing over the chicken mixture and toss to combine.
- Serve the chicken salad over a bed of mixed greens.
