Ingredients

  • 4 oz Cooked Chicken Breast, diced
  • 1/2 cup Black Beans, rinsed and drained
  • 1/2 cup Corn, canned or frozen
  • 1/4 cup Red Onion, diced
  • 1/4 cup Bell Pepper, diced
  • 2 tbsp Cilantro, chopped
  • 2 tbsp Lime Juice
  • 1 tbsp Olive Oil
  • 1/4 tsp Chili Powder
  • 1/4 tsp Cumin
  • Salt and Pepper to taste
  • 2 cups Mixed Greens


Instructions

  1. In a bowl, combine the diced chicken, black beans, corn, red onion, bell pepper, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, chili powder, cumin, salt, and pepper.
  3. Pour the dressing over the chicken mixture and toss to combine.
