Ingredients
- 12 ounces pasta (penne, rotini, or your favorite)
- 1 tablespoon olive oil
- 1 cup broccoli florets (fresh or frozen)
- 2 cups shredded rotisserie chicken
- 1/2 cup grated Parmesan cheese
- 1/4 cup milk (or unsweetened almond milk)
- 2 cloves garlic, minced
- Salt and black pepper to taste
Instructions
- Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add broccoli and cook until tender-crisp, about 5 minutes.
- Add minced garlic to the skillet and cook for 30 seconds until fragrant.
- Stir in the shredded rotisserie chicken and cook until heated through, about 2-3 minutes.
- Add the cooked pasta to the skillet along with Parmesan cheese and milk. Toss to combine.
- If the sauce is too thick, add reserved pasta water a tablespoon at a time until desired consistency is reached.
- Season with salt and pepper to taste. Serve immediately.

- You can use any type of pasta you prefer.
- Feel free to add other vegetables like bell peppers or spinach.
- For a dairy-free option, use nutritional yeast instead of Parmesan cheese and a dairy-free milk alternative.
