Ingredients
- 1 lb Ground Beef
- 1 packet Taco Seasoning
- 1 cup Cooked Rice
- 1 cup Black Beans
- 1 cup Corn
- 1/2 cup Salsa
- 1/4 cup Shredded Cheese
- 1/4 cup Greek Yogurt or Sour Cream
- 1/4 cup Guacamole (optional)
- Lettuce (optional)
Instructions
- Brown ground beef in a skillet over medium-high heat. Drain excess fat.
- Add taco seasoning and water according to package directions. Simmer until liquid is absorbed.
- In a bowl, layer rice, black beans, corn, and lettuce (if using).
- Top with seasoned ground beef, salsa, cheese, Greek yogurt or sour cream, and guacamole (if using).
- Serve immediately.
