Ingredients
- 1 lb Cooked Chicken Breast, shredded
- 1 cup Cooked Rice (brown or white)
- 1 can (15 oz) Black Beans, rinsed and drained
- 1 cup Corn (fresh, frozen, or canned)
- 1/2 cup Salsa
- 1/4 cup Greek Yogurt or Sour Cream
- 1/4 cup Shredded Cheddar Cheese
- 1 Avocado, diced
- Lime wedges, for serving
- Optional toppings: Cilantro, jalapenos, hot sauce
Instructions
- Prepare the rice according to package directions.
- If using frozen corn, microwave or sauté until heated through.
- In a bowl, combine the cooked rice, black beans, corn, and shredded chicken.
- Top with salsa, Greek yogurt or sour cream, cheddar cheese, and avocado.
- Serve with lime wedges and any optional toppings.
