Ingredients

  • 4 boneless, skinless chicken breasts (about 24 oz)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 (10.75 oz) can condensed cream of chicken soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped green onions (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut chicken breasts into 1-inch cubes.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add chicken, garlic powder, salt, and pepper. Cook until chicken is cooked through, about 5-7 minutes.
  5. In a bowl, whisk together cream of chicken soup and milk.
  6. Pour soup mixture over chicken in the skillet. Stir to combine.
  7. Stir in 1/2 cup cheddar cheese and 1/4 cup mozzarella cheese.
  8. Transfer mixture to a baking dish.
  9. Top with remaining cheddar and mozzarella cheese.
  10. Bake for 20-25 minutes, or until cheese is melted and bubbly.
  11. Garnish with green onions, if desired.
  12. Allow to cool slightly before portioning into meal prep containers.
