This High Protein Cottage Cheese Turkey Sausage Breakfast Casserole is a simple and delicious way to meal prep a healthy and protein-packed breakfast for the week.
Ingredients
- 1 pound ground turkey sausage
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cottage cheese
- 1 cup shredded cheddar cheese
- 1/2 cup chopped green onions
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground turkey sausage in a skillet over medium heat. Drain any excess grease.
- Add chopped onion and bell pepper to the skillet and cook until softened, about 5 minutes.
- Stir in garlic powder, salt, and pepper.
- In a large bowl, combine cooked sausage mixture, cottage cheese, cheddar cheese, and green onions.
- Pour mixture into a greased 9×13 inch baking dish.
- Bake for 25-30 minutes, or until golden brown and set.
- Let cool slightly before serving.
Notes
- You can substitute any type of sausage you like.
- Feel free to add other vegetables, such as mushrooms or spinach.
- For a spicier casserole, add a pinch of red pepper flakes.
