Description

Enjoy a flavorful and nutritious taco bowl featuring roasted potatoes and your choice of protein.


Ingredients

  • 1.5 kg potatoes, cubed
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 kg ground beef or plant-based protein
  • 1 packet taco seasoning
  • 1 cup water
  • 2 cups cooked rice or quinoa
  • 2 cups black beans, rinsed and drained
  • 2 cups corn
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1 cup sour cream or Greek yogurt
  • 1 avocado, diced
  • 1/2 cup chopped cilantro


Instructions

  1. Preheat oven to 200°C. Toss potatoes with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Roast for 20-25 minutes, or until golden brown and tender.
  2. While potatoes are roasting, cook ground beef or plant-based protein in a large skillet over medium heat. Drain any excess grease.
  3. Stir in taco seasoning and water. Simmer for 5-10 minutes, or until liquid is absorbed.
  4. Assemble taco bowls by layering rice or quinoa, black beans, corn, seasoned protein, and roasted potatoes.
  5. Top with salsa, cheese, sour cream or Greek yogurt, avocado, and cilantro.
  6. Serve immediately and enjoy.
