Enjoy a flavorful and nutritious taco bowl featuring roasted potatoes and your choice of protein.
Ingredients
- 1.5 kg potatoes, cubed
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 kg ground beef or plant-based protein
- 1 packet taco seasoning
- 1 cup water
- 2 cups cooked rice or quinoa
- 2 cups black beans, rinsed and drained
- 2 cups corn
- 1 cup salsa
- 1 cup shredded cheese
- 1 cup sour cream or Greek yogurt
- 1 avocado, diced
- 1/2 cup chopped cilantro
Instructions
- Preheat oven to 200°C. Toss potatoes with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Roast for 20-25 minutes, or until golden brown and tender.
- While potatoes are roasting, cook ground beef or plant-based protein in a large skillet over medium heat. Drain any excess grease.
- Stir in taco seasoning and water. Simmer for 5-10 minutes, or until liquid is absorbed.
- Assemble taco bowls by layering rice or quinoa, black beans, corn, seasoned protein, and roasted potatoes.
- Top with salsa, cheese, sour cream or Greek yogurt, avocado, and cilantro.
- Serve immediately and enjoy.
