Ingredients

  • 1 large sweet potato, cubed
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked black beans
  • 1 cup cooked rice
  • 1/2 cup corn
  • 1/2 cup pico de gallo
  • 1/4 cup shredded cheese
  • Optional: avocado, sour cream, hot sauce


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato with olive oil, chili powder, cumin, salt, and pepper.
