Ingredients
- 1 large sweet potato, cubed
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cooked black beans
- 1 cup cooked rice
- 1/2 cup corn
- 1/2 cup pico de gallo
- 1/4 cup shredded cheese
- Optional: avocado, sour cream, hot sauce
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potato with olive oil, chili powder, cumin, salt, and pepper.
- Spread sweet potato on a baking sheet and roast for 20-25 minutes, or until tender.
- In a bowl, combine rice, black beans, corn, and roasted sweet potato.
- Top with pico de gallo, cheese, and any other desired toppings.
- Serve immediately.
