Ingredients
- 1 pound pasta (whole wheat or gluten-free)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup bell pepper, diced
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, and bell pepper.
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
- Pour dressing over the pasta and vegetables. Toss to coat.
- Stir in fresh basil.
- Refrigerate for at least 30 minutes before serving.

- Add grilled chicken or chickpeas for extra protein.
