Ingredients

  • 1 pound ground chicken
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 packet taco seasoning
  • 1/2 cup shredded cheddar cheese
  • Optional toppings: sour cream, avocado, cilantro


Instructions

  1. Brown ground chicken in a large skillet over medium-high heat. Drain any excess grease.
  2. Add onion and bell pepper to the skillet and cook until softened, about 5 minutes. Stir in garlic and cook for 1 minute more.
  3. Stir in diced tomatoes, black beans, corn, and taco seasoning. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  4. Remove from heat and sprinkle with cheddar cheese. Cover and let stand until cheese is melted.
  5. Serve with your favorite toppings.
