Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Greek yogurt
  • 1 tbsp lemon juice


Instructions

  1. Preheat grill or skillet to medium-high heat.
  2. Season chicken breasts with olive oil, oregano, garlic powder, salt, and pepper.
  3. Grill or cook chicken for 6-8 minutes per side, or until cooked through. Let rest for 5 minutes, then dice.
  4. In a bowl, combine quinoa, cucumber, tomatoes, feta cheese, olives, and red onion.
  5. Top with diced chicken.
  6. In a small bowl, whisk together Greek yogurt and lemon juice. Drizzle over the bowl.
  7. Serve immediately.
