Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked quinoa
- 1 cup chopped cucumber
- 1 cup chopped tomatoes
- 1/2 cup crumbled feta cheese
- 1/4 cup Kalamata olives, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup Greek yogurt
- 1 tbsp lemon juice
Instructions
- Preheat grill or skillet to medium-high heat.
- Season chicken breasts with olive oil, oregano, garlic powder, salt, and pepper.
- Grill or cook chicken for 6-8 minutes per side, or until cooked through. Let rest for 5 minutes, then dice.
- In a bowl, combine quinoa, cucumber, tomatoes, feta cheese, olives, and red onion.
- Top with diced chicken.
- In a small bowl, whisk together Greek yogurt and lemon juice. Drizzle over the bowl.
- Serve immediately.

- You can use pre-cooked quinoa to save time.
