Description

Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup mixed vegetables (fresh or frozen)
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken and cook until browned and cooked through.
- Remove chicken from skillet and set aside.
- Add onion and garlic to the skillet and cook until softened.
- Stir in rice, chicken broth, mixed vegetables, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer, covered, for 15-20 minutes, or until rice is cooked and liquid is absorbed.
- Return chicken to the skillet and heat through.
- Serve immediately.
Notes
- For a spicier dish, add a pinch of red pepper flakes.
- Use brown rice for a more nutritious option. Cooking time will increase.
- Add other vegetables like bell peppers, zucchini, or mushrooms.
