Description

Prepare healthy and delicious chicken meal prep bowls for your lunches and dinners.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cubed
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa
  • 1 cup chopped broccoli
  • 1 cup sliced bell peppers
  • 1 cup shredded carrots
  • 1/2 cup chickpeas
  • 1/4 cup light vinaigrette dressing


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss chicken with olive oil, paprika, garlic powder, salt, and pepper.
  3. Spread chicken on a baking sheet and bake for 15-20 minutes, or until cooked through.
  4. Divide quinoa, broccoli, bell peppers, carrots, chickpeas, and chicken into meal prep containers.
  5. Drizzle with vinaigrette dressing.
  6. Store in the refrigerator for up to 4 days.
