Prepare a week’s worth of healthy and delicious chicken broccoli pasta meals with this easy recipe.
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 pound broccoli florets
- 1 pound whole wheat pasta
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and set aside.
- While pasta cooks, heat olive oil in a large skillet over medium heat.
- Add chicken and cook until browned and cooked through.
- Add garlic and broccoli to the skillet and cook until broccoli is tender-crisp.
- Stir in chicken broth and Parmesan cheese. Season with salt and pepper.
- Add cooked pasta to the skillet and toss to combine.
- Divide pasta mixture among meal prep containers.
- Let cool completely before refrigerating.
Notes
- You can substitute other vegetables for broccoli, such as asparagus or bell peppers.
