Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 pound broccoli florets
  • 1 pound whole wheat pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add chicken and cook until browned and cooked through.
  4. Add garlic and broccoli to the skillet and cook until broccoli is tender-crisp.
  5. Stir in chicken broth and Parmesan cheese. Season with salt and pepper.
  6. Add cooked pasta to the skillet and toss to combine.
  7. Divide pasta mixture among meal prep containers.
  8. Let cool completely before refrigerating.
