Ingredients
- 1 lb Ground Beef
- 1 packet Taco Seasoning
- 1 cup Cooked Rice (brown or white)
- 1 cup Black Beans, rinsed and drained
- 1 cup Corn Kernels (fresh, frozen, or canned)
- 1/2 cup Salsa
- 1/4 cup Shredded Cheese (cheddar or Monterey Jack)
- 1/4 cup Greek Yogurt or Sour Cream
- 1 Avocado, diced
- Lettuce, shredded (optional)
Instructions
- Brown the ground beef in a skillet over medium-high heat. Drain any excess grease.
- Add taco seasoning to the ground beef and cook according to package directions.
- Assemble the bowls: Start with a base of cooked rice.
- Top with seasoned ground beef, black beans, corn, salsa, cheese, and Greek yogurt or sour cream.
- Garnish with diced avocado and shredded lettuce (if using).
- Serve immediately or store in airtight containers for meal prep.
