Description

Ground Beef & Roasted Veggie Power Bowls are a healthy and delicious meal option. They are packed with protein and nutrients.


Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, chopped
  • 1 red onion, chopped
  • 1 cup broccoli florets
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 cups cooked quinoa


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss bell peppers, zucchini, red onion, and broccoli florets with olive oil, garlic powder, onion powder, salt, and pepper.
  3. Spread vegetables in a single layer on a baking sheet.
  4. Roast for 20-25 minutes, or until vegetables are tender and slightly browned.
  5. While vegetables are roasting, cook ground beef in a skillet over medium-high heat until browned. Drain any excess grease.
  6. Divide cooked quinoa among four bowls.
  7. Top each bowl with roasted vegetables and cooked ground beef.
  8. Serve immediately.
