Description
A hearty and easy ground beef and rice casserole, perfect for a weeknight family dinner.
Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (10.75 ounce) can condensed tomato soup
- 1 cup water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- 2 cups cooked white rice
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375 degrees F (190 degrees C).
- In a large skillet, brown the ground beef with the onion and garlic over medium heat. Drain off any excess grease.
- Stir in the condensed tomato soup, water, salt, pepper, oregano, and thyme. Bring to a simmer.
- Add the cooked rice and stir to combine.
- Pour the mixture into a greased 9×13 inch baking dish.
- Sprinkle the shredded cheddar cheese evenly over the top.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Let stand for 5 minutes before serving.
Notes
- You can add other vegetables like peas or corn to the casserole.
- For a spicier casserole, add a pinch of red pepper flakes.
- If you don’t have condensed tomato soup, you can use 1 cup of tomato sauce and 1/2 cup of water.
