Description

A hearty and easy ground beef and rice casserole, perfect for a weeknight family dinner.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (10.75 ounce) can condensed tomato soup
  • 1 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 2 cups cooked white rice
  • 1 cup shredded cheddar cheese


Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large skillet, brown the ground beef with the onion and garlic over medium heat. Drain off any excess grease.
  3. Stir in the condensed tomato soup, water, salt, pepper, oregano, and thyme. Bring to a simmer.
  4. Add the cooked rice and stir to combine.
  5. Pour the mixture into a greased 9×13 inch baking dish.
  6. Sprinkle the shredded cheddar cheese evenly over the top.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Let stand for 5 minutes before serving.

Notes

  • You can add other vegetables like peas or corn to the casserole.
  • For a spicier casserole, add a pinch of red pepper flakes.
  • If you don’t have condensed tomato soup, you can use 1 cup of tomato sauce and 1/2 cup of water.
