Ground beef and quinoa power bowls are a protein-packed, light meal option.
Ingredients
- 1 pound lean ground beef
- 1 cup quinoa, uncooked
- 2 cups beef broth
- 1 red onion, diced
- 1 bell pepper (any color), diced
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup frozen corn
- 1/2 cup salsa
- 1/4 cup chopped cilantro
- 1 avocado, diced
- Lime wedges, for serving
Instructions
- Cook quinoa according to package directions using beef broth.
- Brown ground beef in a large skillet over medium-high heat. Drain excess fat.
- Add red onion and bell pepper to the skillet and cook until softened, about 5 minutes.
- Stir in black beans, corn, and salsa. Heat through.
- Divide quinoa among bowls.
- Top with ground beef mixture, cilantro, and avocado.
- Serve with lime wedges.

- Adjust salsa amount to your spice preference.
