Ingredients

  • 1 pound lean ground beef

  • 1 red onion, diced
  • 1 bell pepper (any color), diced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup frozen corn
  • 1/2 cup salsa
  • 1/4 cup chopped cilantro
  • 1 avocado, diced
  • Lime wedges, for serving


Instructions

  1. Cook quinoa according to package directions using beef broth.
  2. Brown ground beef in a large skillet over medium-high heat. Drain excess fat.
  3. Add red onion and bell pepper to the skillet and cook until softened, about 5 minutes.
