Description

A hearty and nutritious Ground Beef & Quinoa Power Bowl packed with protein and flavor.


Ingredients

  • 1 pound ground beef
  • 1 cup quinoa, uncooked
  • 2 cups water
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 avocado, diced
  • 1/4 cup chopped cilantro
  • Lime wedges, for serving
  • Taco seasoning, to taste


Instructions

  1. Cook quinoa according to package directions using water.
  2. Brown ground beef in a skillet over medium-high heat. Drain excess fat.
  3. Season ground beef with taco seasoning.
  4. In a large bowl, combine cooked quinoa, ground beef, black beans, corn, red bell pepper, and red onion.
  5. Top with avocado and cilantro.
  6. Serve with lime wedges.
