Ingredients
- 1 pound ground beef
- 1 cup quinoa, uncooked
- 2 cups water
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1 avocado, diced
- 1/4 cup chopped cilantro
- Lime wedges, for serving
- Taco seasoning, to taste
Instructions
- Cook quinoa according to package directions using water.
- Brown ground beef in a skillet over medium-high heat. Drain excess fat.
- Season ground beef with taco seasoning.
- In a large bowl, combine cooked quinoa, ground beef, black beans, corn, red bell pepper, and red onion.
- Top with avocado and cilantro.
- Serve with lime wedges.
