Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 (15 ounce) can tomato sauce
- 1 (10 ounce) can enchilada sauce
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup corn kernels
- 1 cup shredded cheddar cheese
- Optional toppings: sour cream, avocado, cilantro
Instructions
- Brown ground beef in a large skillet over medium-high heat. Drain excess grease.
- Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
- Stir in tomato sauce, enchilada sauce, black beans, and corn. Bring to a simmer.
- Reduce heat and cook for 10 minutes, stirring occasionally.
- Top with cheddar cheese and cover until melted.
- Serve with your favorite toppings.
