Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 ounces) diced tomatoes, undrained
- 1 cup uncooked white rice
- 2 cups beef broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Brown ground beef in a large skillet over medium-high heat. Drain off any excess grease.
- Add chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
- Stir in diced tomatoes, uncooked rice, beef broth, salt, and pepper.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed.
- Stir occasionally to prevent sticking.
- If using, sprinkle shredded cheddar cheese over the top during the last few minutes of cooking.
- Serve hot.

- For a spicier dish, add a pinch of red pepper flakes.
- You can substitute other vegetables like bell peppers or corn.
