A quick and easy ground beef and rice skillet recipe perfect for a weeknight dinner.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 cup uncooked white rice
  • 2 cups beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese (optional)


Instructions

  1. Brown ground beef in a large skillet over medium-high heat. Drain off any excess grease.
  2. Add chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
  3. Stir in diced tomatoes, uncooked rice, beef broth, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed.
  5. Stir occasionally to prevent sticking.
  6. If using, sprinkle shredded cheddar cheese over the top during the last few minutes of cooking.
