Description

This Grinder Pasta Salad is a hearty and flavorful dish. It combines pasta, Italian deli meats, cheeses, and a tangy dressing. Perfect for potlucks, barbecues, or a quick lunch.


Ingredients

  • 1 pound pasta, cooked and cooled
  • 1/2 pound salami, sliced
  • 1/2 pound ham, sliced
  • 1/4 pound provolone cheese, cubed
  • 1/4 cup red onion, diced
  • 1/2 cup banana peppers, sliced
  • 1/2 cup mayonnaise
  • 1/4 cup red wine vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package directions. Drain and cool completely.
  2. In a large bowl, combine the cooled pasta, salami, ham, provolone, red onion, and banana peppers.
  3. In a separate small bowl, whisk together mayonnaise, red wine vinegar, olive oil, Dijon mustard, Italian seasoning, garlic powder, salt, and pepper.
  4. Pour dressing over the pasta mixture and toss to combine.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
  6. Serve cold.

  • You can substitute any Italian deli meats and cheeses you like.
