Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 large sweet potato, cubed
  • 1 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Optional: your favorite seasonings for chicken (e.g., paprika, garlic powder)


Instructions

  1. Preheat your grill to medium-high heat.
  2. Toss the cubed sweet potato with olive oil, salt, and pepper.
  3. Grill the sweet potato cubes for about 15-20 minutes, or until tender and slightly caramelized, turning occasionally.
  4. While the sweet potatoes are grilling, season the chicken breast with salt, pepper, and any other desired seasonings.
  5. Grill the chicken breast for 6-8 minutes per side, or until cooked through and no longer pink in the center.
  6. Let the chicken rest for a few minutes, then slice it.
  7. Assemble the bowls by placing grilled chicken and sweet potatoes in each serving dish.
