Ingredients
- 1 lb boneless, skinless chicken breast
- 1 large sweet potato, cubed
- 1 tbsp olive oil
- Salt, to taste
- Black pepper, to taste
- Optional: your favorite seasonings for chicken (e.g., paprika, garlic powder)
Instructions
- Preheat your grill to medium-high heat.
- Toss the cubed sweet potato with olive oil, salt, and pepper.
- Grill the sweet potato cubes for about 15-20 minutes, or until tender and slightly caramelized, turning occasionally.
- While the sweet potatoes are grilling, season the chicken breast with salt, pepper, and any other desired seasonings.
- Grill the chicken breast for 6-8 minutes per side, or until cooked through and no longer pink in the center.
- Let the chicken rest for a few minutes, then slice it.
- Assemble the bowls by placing grilled chicken and sweet potatoes in each serving dish.
Notes
- You can roast the sweet potatoes in the oven at 400°F (200°C) for 20-25 minutes if you don’t have a grill.
