Description

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Greek dressing


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss chicken with olive oil, oregano, garlic powder, salt, and pepper.
  3. Spread chicken in a single layer on a baking sheet.
  4. Bake for 15-20 minutes, or until chicken is cooked through.
  5. Divide cooked quinoa among four meal prep containers.
  6. Top with cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  7. Add cooked chicken to each container.
