Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup Kalamata olives, halved
- 1/2 cup crumbled feta cheese
- 1/4 cup Greek dressing
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, toss chicken with olive oil, oregano, garlic powder, salt, and pepper.
- Spread chicken in a single layer on a baking sheet.
- Bake for 15-20 minutes, or until chicken is cooked through.
- Divide cooked quinoa among four meal prep containers.
- Top with cherry tomatoes, cucumber, red onion, olives, and feta cheese.
- Add cooked chicken to each container.
- Drizzle with Greek dressing.
- Refrigerate until ready to eat.

- You can use pre-cooked quinoa to save time.
