Description

Greek chicken bowls are an easy and healthy meal prep option. Enjoy this clean eating recipe for lunch or dinner.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • 1/2 cup Kalamata olives, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Greek vinaigrette dressing


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut chicken breasts into bite-sized pieces.
  3. In a bowl, toss chicken with olive oil, oregano, garlic powder, salt, and pepper.
  4. Spread chicken in a single layer on a baking sheet.
  5. Bake for 15-20 minutes, or until chicken is cooked through.
  6. In four bowls, divide quinoa, cucumber, tomatoes, olives, feta cheese, and red onion.
  7. Top with cooked chicken.
  8. Drizzle with Greek vinaigrette dressing.
  9. Serve immediately or store in the refrigerator for meal prep.

Notes

  • You can use grilled chicken instead of baked chicken.
  • Add hummus or tzatziki sauce for extra flavor.
