Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked quinoa
- 1 cup chopped cucumber
- 1 cup chopped tomatoes
- 1/2 cup Kalamata olives, halved
- 1/2 cup crumbled feta cheese
- 1/4 cup red onion, thinly sliced
- 1/4 cup Greek vinaigrette dressing
Instructions
- Preheat oven to 400°F (200°C).
- Cut chicken breasts into bite-sized pieces.
- In a bowl, toss chicken with olive oil, oregano, garlic powder, salt, and pepper.
- Spread chicken in a single layer on a baking sheet.
- Bake for 15-20 minutes, or until chicken is cooked through.
- In four bowls, divide quinoa, cucumber, tomatoes, olives, feta cheese, and red onion.
- Top with cooked chicken.
- Drizzle with Greek vinaigrette dressing.
- Serve immediately or store in the refrigerator for meal prep.
Notes
- You can use grilled chicken instead of baked chicken.
- Add hummus or tzatziki sauce for extra flavor.
- Adjust the amount of feta cheese and olives to your liking.
