Description

Ingredients

  • 1.5 lbs chicken breast, cubed
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • 1/2 cup Kalamata olives, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 clove garlic, minced


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss chicken with olive oil, oregano, garlic powder, salt, and pepper.
  3. Spread chicken on a baking sheet and bake for 15-20 minutes, or until cooked through.
  4. While chicken is baking, prepare quinoa according to package instructions.
  5. In a small bowl, mix Greek yogurt, lemon juice, and minced garlic.
  6. Assemble bowls with quinoa, chicken, cucumber, tomatoes, olives, red onion, and feta cheese.
  7. Drizzle with Greek yogurt dressing.
