Quick and easy Ginger Garlic Veggie Stir Fry. A flavorful and healthy plant based meal.
Ingredients
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1/2 cup carrots, sliced
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1/2 tsp red pepper flakes (optional)
- Cooked rice, for serving
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add garlic and ginger and cook for 1 minute, until fragrant.
- Add bell pepper, broccoli, snap peas, and carrots. Stir fry for 5-7 minutes, until vegetables are tender-crisp.
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and red pepper flakes (if using).
- Pour sauce over vegetables and stir fry for 1-2 minutes, until sauce has thickened slightly.
- Serve immediately over cooked rice.
