This Garlic Lime Chicken Protein Bowl is a simple and fresh recipe perfect for a healthy dinner.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 limes, juiced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 2 cups cooked quinoa
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 avocado, diced
  • 1/4 cup chopped cilantro


Instructions

  1. In a bowl, combine chicken, olive oil, garlic, lime juice, chili powder, cumin, salt, and pepper. Marinate for at least 15 minutes.
  2. Heat a large skillet over medium-high heat. Add the marinated chicken and cook until fully cooked, about 6-8 minutes.
  3. Divide the cooked quinoa, black beans, corn, and avocado among bowls.
  4. Top with the cooked garlic lime chicken.
  5. Garnish with cilantro and serve.
