Ingredients
- 4 boneless, skinless chicken breasts
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 kg potatoes, peeled and quartered
- 1/2 cup milk
- 4 tbsp butter
Instructions
- Season chicken breasts with garlic, olive oil, thyme, salt, and pepper.
- Cook chicken in a pan over medium heat for 6-8 minutes per side, or until cooked through.
- Boil potatoes until tender, about 15-20 minutes.
- Drain potatoes and mash with milk and butter until smooth.
- Serve chicken over mashed potatoes.
