A simple and delicious one-pan meal featuring flaky salmon, tender asparagus, and roasted potatoes coated in a savory garlic butter sauce. Perfect for a quick and healthy weeknight dinner.
Ingredients
- 1 lb salmon fillet
- 1 lb small potatoes, quartered
- 1 bunch asparagus, trimmed
- 4 cloves garlic, minced
- 4 tbsp butter, melted
- 2 tbsp olive oil
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tbsp lemon juice (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the quartered potatoes with 1 tbsp olive oil, salt, and pepper on a large baking sheet. Roast for 15 minutes.
- While potatoes roast, in a small bowl, mix melted butter, minced garlic, and remaining 1 tbsp olive oil.
- Add the asparagus to the baking sheet with the potatoes. Drizzle half of the garlic butter mixture over the asparagus and toss to coat.
- Place the salmon fillet on the baking sheet. Brush the remaining garlic butter mixture over the salmon.
- Return the baking sheet to the oven and bake for another 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender.
- Squeeze lemon juice over the salmon and vegetables, if desired. Garnish with fresh parsley before serving.
