A simple and delicious one-pan meal featuring flaky salmon, tender asparagus, and roasted potatoes coated in a savory garlic butter sauce. Perfect for a quick and healthy weeknight dinner.


Ingredients

  • 1 lb salmon fillet
  • 1 lb small potatoes, quartered
  • 1 bunch asparagus, trimmed
  • 4 cloves garlic, minced
  • 4 tbsp butter, melted
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp lemon juice (optional)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the quartered potatoes with 1 tbsp olive oil, salt, and pepper on a large baking sheet. Roast for 15 minutes.
  3. While potatoes roast, in a small bowl, mix melted butter, minced garlic, and remaining 1 tbsp olive oil.
  4. Add the asparagus to the baking sheet with the potatoes. Drizzle half of the garlic butter mixture over the asparagus and toss to coat.
  5. Place the salmon fillet on the baking sheet. Brush the remaining garlic butter mixture over the salmon.
  6. Return the baking sheet to the oven and bake for another 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender.
  7. Squeeze lemon juice over the salmon and vegetables, if desired. Garnish with fresh parsley before serving.
