Description

A comforting and flavorful French Onion Chicken Orzo casserole.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup dry white wine
  • 1 cup orzo pasta
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded Gruyere cheese
  • 1/2 cup shredded Parmesan cheese


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add onions and cook until caramelized, about 20-25 minutes. Stir in garlic during the last minute.
  3. Add chicken broth, white wine, orzo, thyme, salt, and pepper to the skillet. Bring to a boil, then reduce heat and simmer for 15 minutes, or until orzo is cooked.
  4. Stir in chicken pieces.
  5. Pour mixture into a greased 9×13 inch baking dish.
  6. Top with Gruyere and Parmesan cheeses.
  7. Bake for 20-25 minutes, or until cheese is melted and bubbly.
  8. Let stand for 5 minutes before serving.

Notes

  • Use bone-in, skin-on chicken thighs for a richer flavor.
  • Add a splash of balsamic vinegar to the caramelized onions for added depth.
  • Substitute vegetable broth for chicken broth.
