Description
A comforting and flavorful French Onion Chicken Orzo casserole.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 2 large onions, thinly sliced
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 cup dry white wine
- 1 cup orzo pasta
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded Gruyere cheese
- 1/2 cup shredded Parmesan cheese
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add onions and cook until caramelized, about 20-25 minutes. Stir in garlic during the last minute.
- Add chicken broth, white wine, orzo, thyme, salt, and pepper to the skillet. Bring to a boil, then reduce heat and simmer for 15 minutes, or until orzo is cooked.
- Stir in chicken pieces.
- Pour mixture into a greased 9×13 inch baking dish.
- Top with Gruyere and Parmesan cheeses.
- Bake for 20-25 minutes, or until cheese is melted and bubbly.
- Let stand for 5 minutes before serving.
Notes
- Use bone-in, skin-on chicken thighs for a richer flavor.
- Add a splash of balsamic vinegar to the caramelized onions for added depth.
- Substitute vegetable broth for chicken broth.
