Ingredients

  • 1 pound chicken breast, cubed
  • 4 cups chicken broth
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon ginger, grated
  • 1 teaspoon garlic, minced
  • 1/2 cup mushrooms, sliced
  • 1/4 cup cilantro, chopped
  • 2 green onions, sliced
  • 1 red bell pepper, thinly sliced


Instructions

  1. In a large pot, combine chicken broth, coconut milk, red curry paste, fish sauce, lime juice, ginger, and garlic. Bring to a simmer.
