Ingredients
- 1 pound chicken breast, cubed
- 4 cups chicken broth
- 1 can (13.5 oz) coconut milk
- 2 tablespoons red curry paste
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 teaspoon ginger, grated
- 1 teaspoon garlic, minced
- 1/2 cup mushrooms, sliced
- 1/4 cup cilantro, chopped
- 2 green onions, sliced
- 1 red bell pepper, thinly sliced
Instructions
- In a large pot, combine chicken broth, coconut milk, red curry paste, fish sauce, lime juice, ginger, and garlic. Bring to a simmer.
- Add chicken and mushrooms. Cook until chicken is cooked through, about 5-7 minutes.
- Stir in red bell pepper. Cook for 2 minutes.
- Garnish with cilantro and green onions before serving.
