- 6 large yellow onions, thinly sliced
- 4 tablespoons butter
- 2 tablespoons olive oil
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 cups beef broth
- 1 cup dry red wine
- 1 bay leaf
- 1 baguette, sliced
- 4 ounces Gruyere cheese, shredded
Instructions
- Caramelize onions: Melt butter and olive oil in a large pot over medium heat. Add onions, sugar, salt, and pepper. Cook, stirring occasionally, for 30-40 minutes, or until onions are deeply golden brown and caramelized.
- Add liquids and simmer: Stir in beef broth, red wine, and bay leaf. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Prepare bread: Preheat oven to 350°F (175°C). Place baguette slices on a baking sheet and bake for 10 minutes, or until lightly toasted.
- Assemble and broil: Ladle soup into oven-safe bowls. Top each bowl with toasted baguette slices and shredded Gruyere cheese.
- Broil: Place bowls under broiler for 2-3 minutes, or until cheese is melted and bubbly.
