Description

This Easy Low Carb Chicken Casserole is a simple and delicious dish perfect for meal prep or a quick dinner. It’s packed with protein and flavor, making it a healthy and satisfying choice.


Ingredients

  • 1.5 lbs cooked chicken, shredded
  • 1 head cauliflower, cut into florets
  • 1 cup broccoli florets
  • 1/2 cup cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup heavy cream
  • 2 tbsp cream cheese
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Steam or boil cauliflower and broccoli until tender-crisp.
  3. In a large bowl, combine cooked chicken, cauliflower, broccoli, heavy cream, cream cheese, garlic powder, onion powder, salt, and pepper.
  4. Mix well until all ingredients are evenly distributed.
  5. Transfer mixture to a greased 9×13 inch baking dish.
  6. Sprinkle cheddar and mozzarella cheese evenly over the top.
  7. Bake for 20-25 minutes, or until cheese is melted and bubbly.
  8. Let stand for a few minutes before serving.
