Ingredients
- 1 large head of broccoli, cut into florets
- 1/2 cup red onion, finely chopped
- 1/2 cup dried cranberries
- 1/4 cup sunflower seeds
- 1/2 cup plain Greek yogurt
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine the broccoli florets, red onion, dried cranberries, and sunflower seeds.
- In a separate small bowl, whisk together the Greek yogurt, apple cider vinegar, honey, salt, and pepper.
- Pour the dressing over the broccoli mixture and toss to coat.
- Refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled.
Notes
- For a creamier dressing, use mayonnaise instead of Greek yogurt.
- Add shredded cheddar cheese for extra flavor.
- If you don’t have apple cider vinegar, white vinegar or lemon juice works well.
