Description

A simple and delicious crockpot meal featuring tender chicken, broccoli, and creamy cheese sauce over rice.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup uncooked white rice
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 cup water
  • 1 cup broccoli florets (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste


Instructions

  1. Place chicken breasts in the bottom of your slow cooker.
  2. In a bowl, mix the condensed soup and water. Pour over the chicken.
  3. Season with salt and pepper.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours, or until chicken is cooked through.
  5. Remove chicken and shred it with two forks. Return shredded chicken to the slow cooker.
  6. Stir in the uncooked rice and broccoli florets.
  7. Cover and cook on high for another 30-45 minutes, or until rice is tender and broccoli is cooked.
  8. Stir in the shredded cheddar cheese until melted and creamy.
  9. Serve hot.

Notes

  • You can use chicken thighs instead of breasts.
  • Adjust seasoning to your preference.
  • Add other vegetables like carrots or peas if desired.
