A hearty and comforting cheeseburger soup made easily in your slow cooker. Perfect for a quick and satisfying meal on a chilly evening.
Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups diced potatoes (about 2 medium)
- 1 cup shredded carrots (about 2 medium)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- Optional toppings: cooked bacon bits, chopped chives, sour cream
Instructions
- Brown the ground beef in a skillet over medium-high heat. Drain off excess fat.
- Add the browned ground beef, chopped onion, and minced garlic to your slow cooker.
- Stir in the beef broth, diced potatoes, shredded carrots, salt, pepper, and paprika.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
- Stir in the milk and cook for another 15-20 minutes, or until heated through. Do not boil.
- Remove from heat and stir in the cheddar cheese and Monterey Jack cheese until melted and smooth.
- Serve hot, garnished with your favorite toppings.
Notes
- For a thicker soup, you can mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the soup during the last 30 minutes of cooking.
- Adjust seasonings to your preference.
- You can use pre-shredded vegetables to save time.
