Description

A delicious and easy Creamy Tuscan Chicken Skillet recipe. Enjoy tender chicken in a rich, flavorful sauce with sun-dried tomatoes and spinach.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 5 oz fresh spinach
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Season the chicken pieces with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  3. Add minced garlic to the skillet and cook until fragrant, about 1 minute.
  4. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
  5. Stir in heavy cream and sun-dried tomatoes. Bring to a simmer.
  6. Add spinach to the skillet and cook until wilted.
  7. Stir in Parmesan cheese until melted and smooth.
  8. Return the cooked chicken to the skillet.
  9. Simmer for a few minutes to heat through.
  10. Serve immediately.

  • Serve over pasta, rice, or mashed potatoes.
  • Garnish with fresh parsley or basil.
  • Add red pepper flakes for a touch of heat.
