A delicious and easy Creamy Tuscan Chicken Skillet recipe. Enjoy tender chicken in a rich, flavorful sauce with sun-dried tomatoes and spinach.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup sun-dried tomatoes, oil-packed, drained and chopped
- 5 oz fresh spinach
- 1/4 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Season the chicken pieces with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
- Add minced garlic to the skillet and cook until fragrant, about 1 minute.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
- Stir in heavy cream and sun-dried tomatoes. Bring to a simmer.
- Add spinach to the skillet and cook until wilted.
- Stir in Parmesan cheese until melted and smooth.
- Return the cooked chicken to the skillet.
- Simmer for a few minutes to heat through.
- Serve immediately.
Notes
- Serve over pasta, rice, or mashed potatoes.
- Garnish with fresh parsley or basil.
- Add red pepper flakes for a touch of heat.
