Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 (1 ounce) package taco seasoning
- 3 cups frozen shredded hash brown potatoes, thawed
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet, brown ground beef and onion over medium heat. Drain off any excess grease.
- Stir in cream of mushroom soup, diced tomatoes and green chilies, and taco seasoning.
- In a 9×13 inch baking dish, spread the thawed hash browns evenly.
- Pour the ground beef mixture over the hash browns.
- Top with shredded cheddar cheese.
- Bake for 30-40 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
- Let stand for a few minutes before serving.

- You can substitute ground turkey or chicken for ground beef.
- Add other vegetables such as corn or bell peppers.
