Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 (1 ounce) package taco seasoning
  • 3 cups frozen shredded hash brown potatoes, thawed
  • 1 cup shredded cheddar cheese


Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet, brown ground beef and onion over medium heat. Drain off any excess grease.
  3. Stir in cream of mushroom soup, diced tomatoes and green chilies, and taco seasoning.
  4. In a 9×13 inch baking dish, spread the thawed hash browns evenly.
  5. Pour the ground beef mixture over the hash browns.
  6. Top with shredded cheddar cheese.
  7. Bake for 30-40 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  8. Let stand for a few minutes before serving.
