Description

This Easy Chicken Burrito Casserole is a healthy and delicious meal. It is gluten-free and can be made dairy-free.


Ingredients

  • 1 lb cooked chicken, shredded
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 cup salsa
  • 1/2 cup gluten-free enchilada sauce
  • 1/4 cup chopped cilantro
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 6 gluten-free tortillas, cut into pieces
  • 1 cup dairy-free cheese shreds (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine shredded chicken, black beans, corn, salsa, enchilada sauce, cilantro, chili powder, and cumin.
  3. Grease a 9×13 inch baking dish.
  4. Place a layer of tortilla pieces on the bottom of the dish.
  5. Pour half of the chicken mixture over the tortillas.
  6. Sprinkle with half of the dairy-free cheese (if using).
  7. Repeat layers with remaining tortilla pieces, chicken mixture, and cheese.
  8. Bake for 20-25 minutes, or until heated through and cheese is melted (if using).
  9. Let stand for a few minutes before serving.

Notes

  • You can use rotisserie chicken to save time.
  • For a dairy-free version, omit the cheese or use dairy-free cheese shreds.
  • Add chopped bell peppers or onions for extra vegetables.
  • Adjust the amount of chili powder and cumin to your taste.
