Description
This Easy Chicken Burrito Casserole is a healthy and delicious meal. It is gluten-free and can be made dairy-free.
Ingredients
- 1 lb cooked chicken, shredded
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 cup salsa
- 1/2 cup gluten-free enchilada sauce
- 1/4 cup chopped cilantro
- 1 tsp chili powder
- 1/2 tsp cumin
- 6 gluten-free tortillas, cut into pieces
- 1 cup dairy-free cheese shreds (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine shredded chicken, black beans, corn, salsa, enchilada sauce, cilantro, chili powder, and cumin.
- Grease a 9×13 inch baking dish.
- Place a layer of tortilla pieces on the bottom of the dish.
- Pour half of the chicken mixture over the tortillas.
- Sprinkle with half of the dairy-free cheese (if using).
- Repeat layers with remaining tortilla pieces, chicken mixture, and cheese.
- Bake for 20-25 minutes, or until heated through and cheese is melted (if using).
- Let stand for a few minutes before serving.
Notes
- You can use rotisserie chicken to save time.
- For a dairy-free version, omit the cheese or use dairy-free cheese shreds.
- Add chopped bell peppers or onions for extra vegetables.
- Adjust the amount of chili powder and cumin to your taste.
