Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 1 packet taco seasoning
- 1 cup rice
- 2 cups beef broth
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) corn, drained
- 1 cup salsa
- 2 cups shredded cheddar cheese
- Toppings: sour cream, avocado, cilantro
Instructions
- Brown ground beef and onion in a large skillet. Drain excess grease.
- Stir in taco seasoning, rice, and beef broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until rice is cooked.
- Stir in black beans, corn, and salsa.
- Top with shredded cheddar cheese and cover until melted.
- Garnish with sour cream, avocado, and cilantro. Serve immediately.
