Description

Enjoy a quick and easy Cheesy Taco Rice Skillet. This one-pan meal is perfect for a weeknight dinner.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 packet taco seasoning
  • 1 cup rice
  • 2 cups beef broth
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • Toppings: sour cream, avocado, cilantro


Instructions

  1. Brown ground beef and onion in a large skillet. Drain excess grease.
  2. Stir in taco seasoning, rice, and beef broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until rice is cooked.
  3. Stir in black beans, corn, and salsa.
  4. Top with shredded cheddar cheese and cover until melted.
  5. Garnish with sour cream, avocado, and cilantro. Serve immediately.
