Description

Quick and easy cheesy chicken taquitos perfect for a family Mexican dinner night. These taquitos are simple to make and packed with flavor.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound cooked shredded chicken
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12-16 corn tortillas
  • Optional toppings: salsa, sour cream, guacamole, chopped cilantro


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine the shredded chicken, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Stir in the cheddar and Monterey Jack cheeses until evenly distributed.
  4. Warm the corn tortillas slightly to make them pliable. You can do this in a microwave or a dry skillet.
  5. Spoon about 2-3 tablespoons of the chicken and cheese mixture into the center of each tortilla.
  6. Roll up each tortilla tightly to form a taquito.
  7. Place the taquitos seam-side down on a baking sheet.
  8. Bake for 15-20 minutes, or until golden brown and crispy.
  9. Serve immediately with your favorite toppings.
